  1. Exopolysaccharides, yum! A sign that Pediococcus (a lactic acid bacteria) is at work. It is more prone to happen in the presence of simple sugars added for bottle conditioning, but the Brett will clean it up eventually. I’ve only had it happen to one of my sours, and it wasn’t nearly to that level.

  2. Ii got some major sickness from using the WYeast Biere de Garde yeast pack that is sourced from Fantome. Very ropy.
