(Lakewood, NY) – The Southern Tier Brewing team haven’t put out enough new beers in the past couple years to satisfy the craft beer drinkers have they? Wrong, but that hasn’t stopped them from brewing up another big beer for us. Southern Tier is set to release Oak Aged Unearthly IPA at the beginning of March according to Head Brewer, Paul Cain. Oh, and a little info on Cuvee #2…
The original Unearthly is available year-round and carries a 4.22 avg on Beer Advocate. 153 IBUs per the label. I’d have to track down the IBU index and see where that ranks it. [2 questions: a) Does anyone know what IBU rankings I am referring to and can find it? 2) Have you had any Oak Aged IPAs before and if so, how do you think they normally come out?]

Cain also confirmed that Cuvee #2 is on track for release the first week of February. Commercial description:
“ALE IMPRESSIONS: Dark ruby red color, roasted malt flavor with apparent bitterness. Finishes with a rich caramel and espresso aroma.
AMERICAN OAK IMPRESSIONS: Impressions of vanilla crème, classic crème brûlée and nougat. A little more oak flavor than series one, but with creamy intensity.”
That’s not all. Southern Tier Back Burner returns in February and Southern Tier Jah-va follows it in March. Busy days for this New York brewery…
DFH Burton Baton is oak-aged 90 Min (I think it might only be partially, but I’m not entirely sure). It was hot when I tried it fresh, haven’t aged it at all.
I’ve had oak-aged 120 Min, which was absolutely fantastic, but nothing like an IPA.
I’m looking forward to the oak-aged Unearthly.
DFH Burton Baton would definitely qualify as an oak-aged Double IPA, but it’s not exactly oak-aged 90min. It’s a blend of 90min. and something else – don’t remember what at the moment.
A few years back Dominion had a really nice oak-aged IPA, and there have been several for tastings at the EBF Night of the Barrels.
If I’m not mistaken, though, Burton Baton is the only one that’s regularly bottled.
I have liked most of the oak-aged IPAs I’ve tried… they tend to have a really dry taste and finish. And I suspect UnEarthly will really do well on oak.

Three Floyds puts out Blackheart annually, it’s an oak aged double IPA. They call it a “UK IPA,” but at like 9% and around 90IBUs, I’d call it a double.
Plus, it’s retarded good. Hoping that Southern Tier’s attempts are comparable, because oak on hops can work very nicely.
i just got an Upstream Oak Aged IPA. i was wondering how these come out. how well does an IPA age really? even if it is on oak.
