A lot of Dogfish Head fans out there so I thought this may be of interest. Dogfish Head Chicha is the newest ‘ancient’ beer to come from the Delaware brewery though it is a brewpub exclusive (not bottles!).
From the website: “Chicha is the quintessential native corn beer throughout Central and South America […] Dogfish Head Chicha is most closely based upon Peruvian brewing traditions. We’ve sourced indigenous ingredients to make the most authentic interpretation possible: organic pink Peruvian pepper corns, yellow maize and organic Peruvian purple maize. We also use local (US) strawberries – a traditional chicha ingredient that we chose to source locally as we were worried Peruvian strawberries would spoil in transit.”

Thats not chicha in any way… There isn’t a traditional Peruvian Chicha its mostly from Colombia, totally different cultures of indigenous people.. oh well most people would never quaff chicha if they actually tried it from Colombia as it is made using the enzymes from your saliva after chewing the corn, and is quite sour think berlinerwiess… Cheers
Scandalous! I think the NYT article said that chicha is no longer made by chewing the corn or one of the commenters said that.
That said, I’ve never quite taken to berlinerweiss. A bit too imbalanced for me.
