(Hooksett, NH) – Here is the third and final installation of my beery interrogation of White Birch Brewing‘s Bill Herlicka.
White Birch has a couple wild ale releases on the way. Here’s the scoop:
Barrel-Aged Indomitus American Wild Ale: The word indomitus is Latin for untamed. Label description: “Barrel fermented, untamable, unblended, fierce. This beer is fermented in oak with a blend of brettanomyces and aged hops, served full-strength from the barrel for your enjoyment.” 7.8% ABV in 750’s. 156 bottles total (per label).
Herlicka notes, “It’s a total of 13 cases for this batch. Fermented in the barrel and brewed with 10 year-old Cascade hops. Last year’s Wild Ale was a festival-only release and after much waiting, I’m happy to distribute this as our first wild ale to our stores.”
Barrel-Aged Brewers Reserve American Wild Ale: “We’re sentimental about this barrel as we’ve had it for many years. Complex, infused with a different strain of brettanomyces from our library of wild yeasts. We enjoyed a bit too much of the barrel as it aged so we have 15 bottles, 12 of which will be released to the public. We’ll be selling them with a glass at the brewery with a tour led by me and tasting of some beers underway. Our goal is to use this beer to raise money for the local foodbank. All proceeds from the sale of this beer will be donated and the buyers will get a reciept for tax purposes. The goal is to raise $600 or more for the foodbank as summer is the hardest time for the local foodbank. Donations dry up, but the need is still there. It’s a small thing, but I’d rather do what I can for a great cause.” 10.1% ABV in 750’s.
Lastly, Herlicka just appeared on the Cigar Authority Podcast. He revealed that he hopes to double the size of the brewery in 2011 to from two barrels to at least four barrels with a goal of growing to 10 barrels.
