– First opened his eyes to possibilities of cider in 2000 while on a trip to England with Goose Island brewers
– Sees the cider industry as being where the beer industry was 20 years ago
– Looking at property in Michigan and hopes to close on land by the end of year
– Apples will be sourced from both Illinois and Michigan but mostly the latter
– Will be producing cider at an independent winery the first year
– Total production for first year likely to be around the equivalent of 1,000 beer barrels
– Redstreak, Cox’s Orange Pippin and Chisel Jersey among the apple varieties Virtue Cider will be working with
– Will be playing with Brett, Lacto, etc. eventually
