We are releasing Petite Sour this week. Quite a lot of conceptualization has gone into the beer and the second incarnation is really a whole new beer. The beer is very process driven and has molded into a tart farmhouse table beer. I believe it to be more in the way of what the farmers would have brewed for their farmhands, refreshing and sustaining. Petite Sour is our petite version of Surette our Provision Saison aged in oak barrels. The second batch of Surette is now in our large oak foeder aging and should be released soon, once the Brettanomyces flavor peaks. Hopefully in the next few months we’ll brew St. Bretta and HopSavant the other two beers which we will produce year around once the Denver brewery is operational.
