Schlafly incorporating solera method into new crop of sour beers

In another interesting touch, some of Schlafly’s sour beers will be made with a technique similar to the solera process used for sherry: Small portions of earlier batches will be blended into newer batches, such that the new batches will have elements of the first Schlafly sour beer, dating to its origins in 2010.
