Update: there is no spontaneously-fermented Hill Farmstead beer named Jasper

The third element of terroir is the Hill Farmstead beer, called Jasper, the yeast for which is spontaneously fermented in the milkhouse. Jasper beer is used to wash the cheese. It will likely be bottled for sale in the coming year, Kehler said.

Update: Shaun Hill of Hill Farmstead wrote in to correct some misinformation in the Burlington Free Press report we cited earlier. The beer noted in the article is sitting in barrels and may or may not be released in the future but if it is, it will carry a different name than Jasper. It is not spontaneously fermented either.
